pan seared mahi~mahi with a vietnamese carmel sauce
its a long thin fish also called dolphinfish cause it has a large bump on its head. its a medium tasting fish,not as strong as tuna but more flavor than cod. close to swordfish taste. cooks well and dosent fall apart like some whitefish does so you can grill it and pan sear it nicely. check it out sometime. I only buy it when its on sale. dosent have too many bones just some large ones down its lateral line if the seafood dept misses em while cleaning.
