not bad. I've always made it in cake pans but will try your way in that loaf pan. slice it and make a cornbread sandwich. thanks for the info.

Anytime! Also, I used splenda, I can't believe it's not butter LIGHT & unsweetened almond milk. It turned out pretty tasty!

& Almond Milk is sold here in Baltimore at every grocery store I go to! Superfresh, Giant etc... Silk just started making it, and Almond Breeze is good too. Sold with the regular cold milks.

thanks for the info. I have to check shoprite if they have it. probably not though. very basic stuff. I ask if they can get japanese eggplant and they won't. so almond milk might be non existant in their minds ha ha.
